Our Spirits
This is what we are working on.
Our Spirits are all crafted by hand, in the smallest batches. We get most of our malts from local malt houses, as local as possible. When we can we source our other ingredients locally or scavenge for the botanicals. We don't use GMO products and often have mostly organic grains to make our spirits from. We pride ourselves in what the Gailic call Anam on Fhearain, the soul of the land. Come by for a taste and understand the difference hand crafted in every way really means, and find the spirit within the spirit!
Deja-Brew
A 'spirit distilled from grain, flavored with hops' is what the government calls this spirit. It is Dam Brewhouse 'Freestyle' a NEIPA distilled, and left on Oak to mature. It smells like whisky, looks like whisky and tastes like whisky, but it is SO much more! It is Daja-Brew!

Beloved Gift Vodka
A neutral spirit made with malted barley and organic oats gives this vodka a rich mouthfeel and rectified by distillation 3 times to over 95% cleans this vodka of any flavors what is left is a neutral spirit with some body, ready to sip neat or to elevate your cocktail from plane Jane to princess Sarah.

Tempero Rum
Tempero is the word for spice in Portuguese. This spiced rum double pot distilled then spiced with 5 spices for a fantastic spiced rum like nothing you have tried. Orange, Cardamom, Grains of Paradise, cinnamon and Vanilla make a great complex spiced rum ready to enjoy neat or to wake up your next rum cocktail

Idoso Rum
Idoso is the word for old in Portuguese. This aged rum double pot distilled then placed on toasted and charred used oak for 5 months to create a smooth easy drinking unique spirit for sipping neat, OR give a different twist to your favorite cocktail!
William's Craze!
William of Orange brought gin to England in the 17th century that ignited a 'gin craze' that swept Europe. In London it became so popular that eventually earned gin the name 'mothers ruin' for all the over imbibing gin drinkers.
William's Craze pays homage to the early gin, without the injurious ingredients. Just some fancy botanicals, but do enjoy in moderation, we need not have Campton's ruin.

Brad's Legacy
Brad's Legacy is a malt whisky double pot distilled in small batches and then aged in used bourbon cooperage that has been used to store maple syrup! Brad Benton being the fourth generation of a sixth generation maple legacy. Oak and Maple round out this single malt with sweet notes of our local forest.

Smoke & Mirrors
Smoke & Mirrors is our smoked malt whisky. NOT smoke from peat that is YUCK. Smoke from maple and apple woods gives our malted grains that smokey flavors that we look for. The first batch is under stated, the second batch underway should have a more pronounced smoke profile with great Oak from a used bourbon barrel.

Joe's Juice
Joe's Juice is Whisky distilled from Bourbon Mash. This is escentially an un-aged bourbon ready for YOU to place on oak and give it the oak character you want! Do you want the flavors from an oak that has a light toast? super dark toast? LOTS of char, or just a tiny bit of char? Leave it for a LONG time or just a little while? taste it often, and pull the oak out when it is JUST right!

Jim Fortune Chocolate Whisky
As Unique as the art of Jim Fortune. An all grain of 4 different malts on 3 grains creating a rich dark beer. 6 row pale malted barley, chocolate roasted malted wheat, two row toasted malted barley and flaked oats. Distilled twice to keep the complex sweet, and chocolate notes, aged on American White Oak for a complex flavor profile that is smooth and long.
