Our Spirits are all crafted by hand, in the smallest batches. We either grow our own GMO free and organic produce, or we use only locally sourced GMO free and organic grains. We pride ourselves in what the Gailic call Anam on Fhearain, the soul of the land. Come by for a taste and understand the difference hand crafted in every way really means, and find the spirit within the spirit!
Hildex Maple Whisky
Made with Corn, Barley and some Maple syrup for a clean and dry start. This is aged on Oak, and Maple woods for a different taste profile than you have expierenced. Finished with some Hildex farm Maple syrup for a little sweetness and some great maple taste, just like the pancakes at Polly's Pancake Parlor. GMO Free, organic, and gluten free.

Jim Fortune Chocolate Whisky
As Unique as the art of Jim Fortune. An all grain of 5 different malts on 3 grains creating a rich dark beer. Distilled twice to keep the complex sweet, and chocolate notes, aged on American White Oak for a complex flavor profile that is smooth and long. GMO Free and organic, but contains Wheat.
